Seaweed Wrapped Tofu: Crispy, Soy-Glazed & Pan-Fried

Ingredients
  

Main Components
  • 1 block extra-firm tofu 14 oz / 400g, pressed
  • 2 sheets roasted nori seaweed 5g, cut into thick bands
  • 2 tbsp cornstarch 16g
  • 2 tbsp neutral oil 30ml, for pan-frying
Glaze & Garnish
  • 3 tbsp soy sauce 45ml
  • 2 tbsp mirin 30ml
  • 1 tbsp light brown sugar 15g
  • 1 tbsp toasted white sesame seeds 9g
  • 2 whole scallions 10g, finely chopped green parts only

Equipment

  • 1 Heavy-bottomed Skillet Cast iron or non-stick preferred for an even sear.
  • 1 Tofu press Or heavy books wrapped in a clean kitchen towel.

Method
 

Preparation and Searing
  1. Wrap the extra-firm tofu in a clean towel and press under a heavy weight for 20 minutes. Slice into 8 rectangular blocks.
  2. Cut the roasted nori into 1.5-inch bands. Wrap a band snugly around the middle of each tofu block, using a dab of water to seal the edges.
  3. Lightly dust the wrapped blocks with cornstarch. Heat oil in a skillet over medium-high heat and pan-fry the blocks seam-side down first. Sear for 3-4 minutes per side until a blistered, golden crust forms.
Glazing and Serving
  1. Whisk soy sauce, mirin, and brown sugar. Pour directly into the hot skillet with the tofu. Simmer for 1-2 minutes until glossy and lightly caramelized.
  2. Transfer the tofu to a plate, drizzle with remaining glaze, and garnish generously with toasted white sesame seeds and finely chopped scallions.

Notes

Tip 1: Always cook the tofu seam-side down initially to lock the nori band in place.
