Preparation and Searing
- Wrap the extra-firm tofu in a clean towel and press under a heavy weight for 20 minutes. Slice into 8 rectangular blocks.
- Cut the roasted nori into 1.5-inch bands. Wrap a band snugly around the middle of each tofu block, using a dab of water to seal the edges.
- Lightly dust the wrapped blocks with cornstarch. Heat oil in a skillet over medium-high heat and pan-fry the blocks seam-side down first. Sear for 3-4 minutes per side until a blistered, golden crust forms.
Glazing and Serving
- Whisk soy sauce, mirin, and brown sugar. Pour directly into the hot skillet with the tofu. Simmer for 1-2 minutes until glossy and lightly caramelized.
- Transfer the tofu to a plate, drizzle with remaining glaze, and garnish generously with toasted white sesame seeds and finely chopped scallions.
