- Slice the chicken breast, bell peppers, and white onion into uniform strips and slivers.
Cooking
- In a large bowl, combine the chicken, peppers, and onions with oil and all spices until everything is coated in a reddish-brown dusting.
- Spread onto the sheet pan in a single layer. Roast for 18-22 minutes, tossing halfway through.
- Look for charred, blistered skins on the peppers and golden-brown seared edges on the chicken.
Garnish
- Remove from oven, scatter fresh cilantro leaves, and squeeze one lime wedge over the pan. Serve with remaining lime wedges.
