  • 2.25 tsp active dry yeast 7g or 1 packet

  • 6 tbsp extra virgin olive oil 90ml total; divided for dough and pan
Sauce and Toppings
  • 2 cups crushed tomatoes 480ml, chunky herb-flecked sauce
  • 12 oz mozzarella cheese 340g, low-moisture, freshly shredded
  • 0.25 cup parmesan cheese 25g, finely grated
  • 1 tbsp dried oregano 2g, for aromatic finish

Equipment

  • 1 13x18 inch Half-Sheet Pan Metal rimmed baking sheet for best conduction.
  • 1 Stand Mixer or Large Bowl For kneading the high-hydration dough.
  • 1 Wire Cooling Rack Prevents the bottom from getting soggy after baking.

Method
 

Prepare the Dough
  1. Combine warm water, sugar, and yeast in a bowl; let sit for 10 minutes until foamy.
  2. Mix in flour, salt, and 3 tbsp (45ml) olive oil. Knead for 8-10 minutes until smooth and elastic.
  3. Place dough in an oiled bowl, cover, and let rise for 1.5 hours until doubled.
Shape and Second Rise
  1. Pour 3 tbsp (45ml) oil into a 13x18 inch pan. Stretch the dough to the corners.
  2. Cover dough and let rise in the pan for 45-60 minutes to develop an airy, porous interior.
Assemble and Bake
  1. Spread chunky sauce over the dough, followed by mozzarella (pushed to the edges) and oregano.
  2. Bake at 450°F (232°C) for 20-25 minutes until the bottom is crispy golden and cheese is bubbly with charred spots.
  3. Dust with parmesan, rest for 5 minutes, and slice into squares.
