Slow Cooker BBQ Chicken: The Easiest, Juiciest Pulled Chicken Ever

Ingredients
  

  • 1 tablespoon brown sugar packed
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1 red onion thinly sliced
  • 2 cloves garlic minced
  • 18 oz BBQ sauce your favorite brand
  • 2 tablespoons apple cider vinegar

Method
 

  1. Scatter the sliced red onion and minced garlic across the bottom of your slow cooker.
  2. In a small bowl, mix together the brown sugar, smoked paprika, garlic powder, onion powder, salt, and pepper. Pat the chicken dry and rub the spice mixture over all sides.
  3. Place the seasoned chicken on top of the onions and garlic. Pour the BBQ sauce and apple cider vinegar over the top. Cover and cook on LOW for 4-5 hours or on HIGH for 2-3 hours.
  4. Remove the cooked chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the pot, stir to combine with the sauce, and let it warm through for 10 minutes before serving.

Notes

For a thicker sauce, remove the chicken after cooking and simmer the sauce on HIGH with the lid off for 20-30 minutes before adding the shredded chicken back in.
