- Scatter the sliced onions across the bottom of the slow cooker.
- In a small bowl, mix together the paprika, garlic powder, onion powder, salt, and pepper.
- Pat the chicken breasts dry with a paper towel, then rub the seasoning mixture over all sides of the chicken.
- Place the seasoned chicken on top of the onions in a single layer. Pour the chicken broth around the chicken.
- Cover and cook on LOW for 2.5 to 3.5 hours, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- Remove the chicken from the slow cooker and let it rest on a cutting board for 5-10 minutes.
- Use two forks to shred the chicken. For extra flavor, toss the shredded chicken with a few tablespoons of the cooking liquid from the crockpot. Serve immediately.
