Ingredients

  • 4 boneless, skinless chicken breasts about 1.5 to 2 lbs total
  • 24 oz jarred marinara sauce use your favorite brand
  • 1 tsp Italian seasoning
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt or to taste
  • 1/4 tsp black pepper
  • 1.5 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup Panko breadcrumbs
  • 2 tbsp butter melted

Equipment

  • 1 Slow Cooker A 6-quart slow cooker is recommended.
  • 1 Baking Dish

Method

  1. Pour 1 cup of marinara sauce into the bottom of the slow cooker. Place chicken breasts in a single layer over the sauce. Sprinkle evenly with Italian seasoning, garlic powder, onion powder, salt, and pepper.
  2. Pour the rest of the marinara sauce over the seasoned chicken.
  3. Cover and cook on LOW for 4-5 hours or on HIGH for 2-3 hours, until the chicken is cooked through and tender.
  4. Preheat your oven's broiler. Carefully transfer the cooked chicken breasts from the slow cooker to a broiler-safe baking dish.
  5. Top each chicken breast with a generous layer of mozzarella and Parmesan cheese. In a small bowl, combine the Panko breadcrumbs and melted butter, then sprinkle this mixture over the cheese.
  6. Place the baking dish under the broiler for 2-3 minutes. Watch very closely until the cheese is melted and bubbly and the breadcrumbs are golden brown.
  7. Serve immediately over pasta, zucchini noodles, or with your favorite sides.
