- Place the red onion wedges and half the minced garlic in the bottom of the slow cooker to create a flavor base.
- Lay the chicken breasts over the onions. Season heavily with dried oregano, salt, and pepper until the chicken is well-coated.
- Pour the chicken stock and olive oil into the pot (avoid pouring directly over the seasoned chicken). Top the chicken with lemon rounds.
- Cover and cook on LOW for 3.5 to 4 hours until the chicken is juicy and tender.
- Scatter fresh parsley and crumbled feta over the top before serving directly from the ceramic pot.
