- Season the chicken thighs with salt and pepper and place them in the bottom of your slow cooker.
- In a medium bowl, whisk together the honey, soy sauce, minced garlic, rice vinegar, sesame oil, grated ginger, and red pepper flakes (if using).
- Pour the honey garlic sauce evenly over the chicken thighs in the slow cooker.
- Cover and cook on LOW for 4-5 hours or on HIGH for 2-3 hours, until the chicken is cooked through and tender.
- Remove the chicken from the slow cooker. In a small bowl, mix the cornstarch with 2 tablespoons of cold water to create a slurry. Whisk the slurry into the sauce in the slow cooker. Turn to HIGH, cover, and cook for another 15-20 minutes until thickened.
- Return the chicken to the slow cooker and toss to coat with the thickened sauce. Serve immediately.
