Slow Cooker Pepper Steak with Tender Beef and Savory Gravy

This Slow Cooker Pepper Steak features melt-in-your-mouth beef strips in a thick, glossy brown gravy. Perfectly softened red and green bell peppers and fresh scallions make this a restaurant-quality meal served over fluffy rice.

Ingredients
  

Pepper Steak Ingredients
  • 1.5 lbs Flank steak Sliced into thin strips against the grain
  • 2 tbsp Vegetable oil For searing
  • 1 large Red bell pepper Sliced into strips
  • 1 large Green bell pepper Sliced into strips
  • 2 cups Beef broth Low-sodium preferred
  • 1/4 cup Soy sauce
  • 1/4 cup Brown sugar Packed
  • 3 cloves Garlic Minced
  • 1/4 cup Cornstarch Mixed with 3 tbsp water
  • 3 cups White rice Cooked/Steamed for serving
  • 3 stalks Green onions Thinly sliced for garnish

Equipment

  • 1 6-quart Slow Cooker Ensures even heat distribution.
  • 1 Cast Iron Skillet Used for searing the beef strips.

Method
 

Preparation
  1. Heat oil in a skillet over medium-high. Sear beef strips in batches until browned (about 2 minutes per side). Transfer to slow cooker.
  2. Add broth, soy sauce, brown sugar, and garlic to the slow cooker. Cover and cook on LOW for 4.5 hours.
  3. Add the sliced red and green bell peppers. Continue cooking on LOW for another 45-60 minutes until peppers are soft.
  4. Whisk cornstarch and water. Stir into the slow cooker. Turn to HIGH and cook for 15-20 minutes until the sauce is thick and glossy.
  5. Spoon beef, peppers, and plenty of gravy over a bed of steamed white rice. Garnish with sliced green onions.
