Preparation
- Heat oil in a skillet over medium-high. Sear beef strips in batches until browned (about 2 minutes per side). Transfer to slow cooker.
- Add broth, soy sauce, brown sugar, and garlic to the slow cooker. Cover and cook on LOW for 4.5 hours.
- Add the sliced red and green bell peppers. Continue cooking on LOW for another 45-60 minutes until peppers are soft.
- Whisk cornstarch and water. Stir into the slow cooker. Turn to HIGH and cook for 15-20 minutes until the sauce is thick and glossy.
- Spoon beef, peppers, and plenty of gravy over a bed of steamed white rice. Garnish with sliced green onions.
