- Place the chicken breasts in a single layer at the bottom of your slow cooker.
- Sprinkle the minced garlic, Italian seasoning, salt, and pepper over the chicken. Scatter the drained sun-dried tomatoes around the chicken.
- Pour the chicken broth over everything. Place the block of cream cheese directly on top of the chicken.
- Cover the slow cooker and cook on LOW for 4-6 hours or on HIGH for 2-3 hours, until the chicken is fully cooked through and tender.
- Remove the cooked chicken and set it aside. Whisk the heavy cream and grated Parmesan cheese into the sauce remaining in the slow cooker until it is smooth and creamy.
- Stir in the fresh spinach until it has wilted completely into the hot sauce.
- Shred the chicken with two forks and return it to the slow cooker. Stir everything together to coat the chicken in the creamy sauce. Serve warm.
