  • 1 lb Ground Beef 80/20 lean-to-fat ratio
  • 1 cup Orange Cheddar Cheese Freshly shredded
  • 0.5 cup Mayonnaise
  • 2 tbsp Yellow Mustard
  • 1 tbsp Ketchup
  • 1 tsp Pickle Brine
  • 4 whole Green Scallions Thinly sliced
  • 1 tbsp Toasted White Sesame Seeds
  • 0.5 cup Crinkle-Cut Dill Pickle Chips

Equipment

  • 1 Rimmed Baking Sheet Large enough to roast potatoes in a single layer.
  • 1 Cast Iron Skillet Essential for creating charred beef edges.
  • 1 Whisk For emulsifying the special sauce.

Method
 

Prepare the Potatoes
  1. Toss potato cubes with oil, salt, and garlic powder. Roast at 425°F (220°C) for 25-30 minutes until golden and crispy.
Sear the Beef
  1. In a hot cast iron skillet, sear ground beef undisturbed for 3 minutes. Crumble and cook until charred edges appear. Top with cheddar to melt.
Sauce and Assemble
  1. Whisk sauce ingredients. Layer potatoes, then beef, then sauce in a bowl. Top with scallions, sesame seeds, and pickles.
