  • 2 large Brioche Buns Soft and shiny
  • 4 slices American Cheese Classic yellow slices
  • 1/2 cup Mayonnaise 120ml
  • 2 tbsp Ketchup 30ml
  • 1 tsp Yellow Mustard 5ml
  • 1 cup Iceberg Lettuce 50g, finely shredded
  • 1/4 medium Red Onion Sliced into thin rings
  • 6-8 slices Crinkle-cut Dill Pickles For acid and crunch
  • 2 tbsp Unsalted Butter 30g, for toasting buns
  • 1 tsp Kosher Salt 5g
  • 1 tsp Coarse Black Pepper 5g

Equipment

  • 1 Cast Iron Skillet or Flat-top Griddle Essential for high heat retention.
  • 1 Heavy-duty Metal Spatula Must be stiff and without slots for a proper smash.
  • 4 Parchment Paper Small squares to prevent sticking.

Preparation
  1. In a small bowl, combine mayo, ketchup, and mustard until a creamy orange-pink sauce forms. Chill until needed.
  2. Shred the iceberg lettuce finely and slice the red onion into paper-thin rings.
Cooking
  1. Butter the brioche buns and toast in a skillet until golden brown. Spread sauce on both buns and add lettuce and pickles to the bottom bun.
  2. Place cold beef balls on a smoking hot cast iron skillet. Use parchment paper and a heavy spatula to smash them thin until jagged edges form. Season heavily.
  3. Cook for 2 minutes until a dark brown crust forms. Flip, add American cheese, and stack patties once melted.
