Cooking
- Butter the brioche buns and toast in a skillet until golden brown. Spread sauce on both buns and add lettuce and pickles to the bottom bun.
- Place cold beef balls on a smoking hot cast iron skillet. Use parchment paper and a heavy spatula to smash them thin until jagged edges form. Season heavily.
