- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper. In a medium bowl, whisk together the flour, cream of tartar, baking soda, and salt.
- In a large bowl, beat the softened butter and 3/4 cup of granulated sugar with an electric mixer until light and fluffy, about 2-3 minutes. Beat in the egg and vanilla extract until just combined.
- Gradually add the dry ingredients to the wet ingredients, mixing on low speed until a soft dough forms. Do not overmix.
- In a small bowl, mix together the 2 tablespoons of granulated sugar and 2 teaspoons of ground cinnamon. Roll the cookie dough into 1-inch balls, then roll each ball in the cinnamon-sugar mixture to coat completely.
- Place the coated dough balls about 2 inches apart on the prepared baking sheet. Bake for 8-10 minutes, until the edges are lightly golden and the centers are set but still soft.
- Let the cookie bites cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. Enjoy!
