Ingredients

  • 1 thick slice sourdough bread about 1-inch thick
  • 0.5 large ripe Hass avocado
  • 1 large egg fresh, free-range preferred
  • 1 tsp lemon juice freshly squeezed
  • Flaky sea salt to taste
  • Freshly cracked black pepper to taste
  • Red pepper flakes optional, for garnish

Equipment

  • 1 Toaster or Skillet
  • 1 Small Non-stick Skillet For frying the egg.
  • 1 Saucepan For poaching the egg.

Method

  1. Toast the sourdough slice until golden-brown and crisp. You can use a toaster or a hot pan with olive oil.
  2. In a small bowl, combine the avocado flesh, lemon juice, salt, and pepper. Gently smash with a fork to your desired consistency.
  3. Cook the egg to your preference. For fried: cook in a non-stick skillet over medium-low heat for 2-3 minutes until the white is set. For poached: simmer in water with a splash of vinegar for 3 minutes.
  4. Spread the smashed avocado over the warm toast. Top with the cooked egg. Garnish with more salt, pepper, and a pinch of red pepper flakes if using.
  5. Serve immediately for the best taste and texture.

Notes
