Main Dough
  • 1 cup (240g) Sourdough discard Unfed starter
  • 3 cups (375g) All-purpose flour Plus extra for dusting
  • 1/2 cup (120g) Greek yogurt Full fat preferred
  • 1/2 cup (120ml) Warm water
  • 1 tsp (5g) Baking powder
  • 1 tsp (5g) Sugar To help with browning
  • 1 tsp (5g) Fine sea salt
Toppings
  • 3 tbsp (42g) Salted butter Melted
  • 2 tbsp (5g) Fresh cilantro Finely minced
  • 1 tsp (5g) Flaky sea salt For finishing

Equipment

  • 1 Cast Iron Skillet Essential for even heat and charring.
  • 1 Rolling Pin To achieve 1/4 inch thickness.
  • 1 Mixing Bowl

Method
 

Prepare the Dough
  1. In a large bowl, whisk together the all-purpose flour, baking powder, sugar, and fine sea salt.
  2. Add the sourdough discard, Greek yogurt, and warm water to the dry ingredients. Stir until a shaggy dough forms.
  3. Turn the dough onto a floured surface and knead for 5-7 minutes until smooth and elastic. Let rest in a covered bowl for 30 minutes.
Cook the Naan
  1. Divide dough into 8 pieces. Roll each into an oval 1/4 inch (6mm) thick.
  2. Heat a cast iron skillet over medium-high heat. Place dough in the dry skillet. Cook until large air bubbles form and the bottom has dark golden-brown charred spots (about 1 minute).
  3. Flip and cook for another 30-45 seconds. The naan should be pale cream with toasted spots.
Finish and Serve
  1. Immediately brush with melted salted butter. Sprinkle with minced cilantro and flaky sea salt. Stack three high on a plate to serve.
