  • 1 cup (200g) Granulated Sugar
  • 0.5 cup (115g) Unsalted Butter Softened
  • 1 cup (240ml) Whole Milk Room temperature
  • 2 large Eggs
  • 1.5 tsp (7g) Baking Powder
  • 0.25 tsp (1g) Salt
Pudding & Fruit Layers
  • 10.2 oz (288g) Instant Banana Pudding Mix Two 5.1oz boxes
  • 3 cups (720ml) Whole Milk Very cold
  • 2 lbs (900g) Fresh Strawberries Sliced and halved
  • 1 box (312g) Vanilla Wafer Cookies Whole
Topping
  • 2 cups (480ml) Heavy Whipping Cream Cold
  • 0.25 cup (30g) Powdered Sugar Sifted
  • 1 tsp (5ml) Vanilla Extract

Equipment

  • 1 9x13 inch Clear Glass Baking Dish Essential for showing visual layers.
  • 1 Handheld or Stand Mixer For the sponge and whipped cream.
  • 1 Silicone Offset Spatula To create smooth pudding layers.

Method
 

Bake the Golden Sponge
  1. Beat softened butter and granulated sugar for 3 minutes until light and fluffy.
  2. Mix in eggs one at a time. Gradually add flour, baking powder, and salt, alternating with milk until smooth.
  3. Pour into a greased 9x13 glass dish. Bake at 350°F (175°C) for 22-25 minutes until golden-brown. Cool completely.
Prepare Fillings & Assemble
  1. Whisk pudding mix with 3 cups cold milk for 2 minutes. Let set for 5 minutes.
  2. Spread half the pudding over the cake. Top with a dense layer of sliced strawberries. Add remaining pudding.
  3. Beat heavy cream, powdered sugar, and vanilla until stiff peaks form. Spread over the pudding.
  4. Top with whole vanilla wafer cookies and strawberry halves with seeded texture showing.
