Slow Cooking & Shredding
- Place chicken breasts in the slow cooker and coat with salt, pepper, garlic, and onion powder. Pour broth around the edges.
- Cover and cook on LOW for 6 hours until chicken is tender and moist.
- Remove chicken and shred with two forks. Set aside.
Finishing the Dish
- Whisk heavy cream and cream cheese into the hot liquid in the slow cooker until glossy and smooth.
- Return chicken to the pot. Stir in sliced red peppers, peas, and corn. Cook on LOW for 30 more minutes.
- Sprinkle with finely chopped fresh parsley just before serving.
