- In a small saucepan, pour the cold water and lime juice. Sprinkle the unflavored gelatin evenly over the top. Let it sit for 5-10 minutes without stirring until the surface appears wrinkled.
- Place the saucepan over low heat. Whisk gently but consistently until all the gelatin granules are completely dissolved. Do not allow the mixture to boil. Whisk in the agave nectar until dissolved.
- Remove the pan from the heat and let it cool for one minute. Slowly pour in the tequila while whisking to combine everything thoroughly.
- Using a dropper or a small spouted measuring cup, carefully fill your silicone molds with the gummy mixture.
- Transfer the molds to the refrigerator and chill for at least 2-4 hours, or until the gummies are completely firm.
- Once firm, carefully pop the gummies out of the molds. Store in an airtight container in the refrigerator for up to one week. Enjoy responsibly.

Tip 1: For easier release, you can very lightly coat the inside of your molds with a neutral oil before filling.
Tip 2: Never boil the mixture once the gelatin is added, as high heat can weaken its setting power.
