- If chicken breasts are thick, pound them to an even ¾-inch thickness. Pat dry with a paper towel.
- In a small bowl, mix salt, pepper, garlic powder, and paprika. Rub the seasoning blend all over both sides of the chicken.
- Heat olive oil in a large skillet over medium-high heat. Cook chicken for 5-7 minutes per side, or until golden and cooked through (165°F). Remove from skillet and set aside.
- In the same skillet, melt butter over medium heat. Add sliced onions and cook for 5-7 minutes until softened. Add sliced mushrooms and cook for another 5-8 minutes until tender.
- Return the chicken to the skillet. Top each breast with the onion and mushroom mixture, then cover with Monterey Jack cheese.
- Reduce heat to low, cover the skillet, and let it cook for 2-3 minutes until the cheese is fully melted. Serve immediately.

For the best flavor, use freshly shredded Monterey Jack cheese instead of pre-shredded.
