Ingredients
  

For the Chicken
  • 4 boneless, skinless chicken breasts about 6-8 oz each
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1/2 tsp paprika
For the Toppings
  • 2 tbsp butter
  • 1 large yellow onion thinly sliced
  • 8 oz cremini mushrooms sliced
  • 4 oz Monterey Jack cheese sliced or shredded

Method
 

  1. If chicken breasts are thick, pound them to an even ¾-inch thickness. Pat dry with a paper towel.
  2. In a small bowl, mix salt, pepper, garlic powder, and paprika. Rub the seasoning blend all over both sides of the chicken.
  3. Heat olive oil in a large skillet over medium-high heat. Cook chicken for 5-7 minutes per side, or until golden and cooked through (165°F). Remove from skillet and set aside.
  4. In the same skillet, melt butter over medium heat. Add sliced onions and cook for 5-7 minutes until softened. Add sliced mushrooms and cook for another 5-8 minutes until tender.
  5. Return the chicken to the skillet. Top each breast with the onion and mushroom mixture, then cover with Monterey Jack cheese.
  6. Reduce heat to low, cover the skillet, and let it cook for 2-3 minutes until the cheese is fully melted. Serve immediately.
