Texas Roadhouse Smothered Chicken Components
  • 4 breasts Chicken Breasts Boneless and skinless
  • 1 tbsp Vegetable Oil 15ml
  • 8 oz Button Mushrooms 225g, sliced
  • 2 large Yellow Onions 300g, thinly sliced
  • 1.5 cups Monterey Jack Cheese 170g, shredded
  • 2 tbsp Fresh Parsley 8g, finely chopped
  • 2 lbs Yukon Gold Potatoes 900g, peeled and cubed
  • 12 oz Green Beans 340g, fresh
  • 2 cups Brown Gravy 480ml, prepared

Equipment

  • 1 Grill Pan or Cast Iron Skillet Used to achieve dark char marks.
  • 1 Sauté Pan For mushrooms and onions.
  • 1 Potato Masher For creamy mashed potatoes.

Method
 

Prepare the Toppings
  1. In a skillet, sauté sliced mushrooms until golden brown. Add onions and cook until translucent and soft.
Grill the Chicken
  1. Season chicken and grill on a high-heat pan for 6-8 minutes per side until dark char marks appear and internal temp is 160°F.
Assemble and Broil
  1. Top chicken with onion/mushroom mix and a heavy layer of Monterey Jack cheese. Broil until bubbly and browned in spots.
  2. Scatter finely chopped fresh parsley over the melted cheese.
Prepare Sides
  1. Mash boiled potatoes with butter/cream. Steam green beans until tender-crisp. Serve chicken with a pool of gravy on the potatoes.
