Make the Croissants
- Place your softened goat cheese into a small bowl. Add a tiny pinch of sea salt and mash it vigorously with a fork until it becomes a creamy, spreadable consistency. Set this aside at room temperature.
- Heat a small non-stick skillet over medium heat and melt the unsalted butter. Once the butter is bubbling, add your overlapping, thinly sliced apples and sprinkle them evenly with the brown sugar. Sauté for 3-4 minutes until golden-brown edges form, then remove from heat.
- Slice the freshly baked croissants in half horizontally. Spread a thick, textured smear of the creamy white goat cheese generously across the bottom half. Carefully layer the warm cooked apples delicately on top of the goat cheese layer.
- Finish by adding a glossy drizzle of golden honey so it runs over the apples. Garnish with tiny green fresh thyme leaves. Place the top croissant half resting at an angle. Serve immediately.
