Method
- Wash a 2-inch piece of fresh ginger root thoroughly. Slice it into thin coins to maximize the surface area for a more flavorful tea.
- In a small saucepan, combine the ginger slices with 4 cups of water. Bring the mixture to a boil, then reduce the heat to a gentle simmer. Let it simmer for at least 15-20 minutes. For a stronger tea, simmer for 30 minutes or longer.
- Carefully pour the tea through a fine-mesh strainer into two mugs to remove the ginger pieces.
- Squeeze about 1 tablespoon of fresh lemon juice into each mug. Add 1-2 tablespoons of honey, or to your desired sweetness. Stir well, taste, and adjust if needed.
Notes
You can easily double or triple this recipe. Store the cooled, strained tea in an airtight jar in the refrigerator for up to 5 days. For a vegan option, use maple syrup instead of honey. No need to peel the ginger, just wash it well.
