  • 6 large Tortillas flour or corn
  • 6 large Eggs
  • 1 cup Milk any kind
  • 1/2 cup Heavy Cream optional
  • 1 cup Shredded Cheese cheddar, Monterey Jack, or blend
  • 1 cup Chopped Vegetables onion, bell peppers, spinach, mushrooms, tomatoes
  • 1/2 cup Cooked Protein sausage, ham, bacon, shredded chicken, optional
  • 1 clove Garlic minced
  • 1 teaspoon Dried Oregano
  • 1/2 teaspoon Salt or to taste
  • 1/4 teaspoon Black Pepper or to taste
  • 2 tablespoons Olive Oil
  • Fresh Parsley chopped, for garnish (optional)

Instructions
 

  • Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.
  • Heat olive oil in a large skillet over medium heat. Add chopped onions and cook until softened, about 3-4 minutes. Add garlic and other vegetables (like bell peppers, mushrooms) and cook for another 5-7 minutes until tender-crisp. If using spinach or tomatoes, add them in the last 2-3 minutes of cooking. Season with a pinch of salt and pepper. Remove from heat.
  • Arrange tortillas in the prepared baking dish, overlapping them to cover the bottom and slightly up the sides, creating a tortilla "crust." You might need to tear or cut some tortillas to fit snugly.
  • In a large mixing bowl, whisk together eggs, milk, heavy cream (if using), oregano, salt, and pepper until well combined.
  • Sprinkle half of the shredded cheese over the tortilla base in the baking dish. Distribute the sautéed vegetables and cooked protein (if using) evenly over the cheese. Pour the egg mixture over the vegetables and cheese. Top with the remaining shredded cheese.
  • Bake in the preheated oven for 30-35 minutes, or until the quiche is set and the top is golden brown. To check for doneness, a knife inserted into the center should come out mostly clean. Let it rest for 5-10 minutes before slicing and serving. Safety Tip: Always use oven mitts when handling hot baking dishes.
