Turkey Hummus Veggie Wrap (Quick & Healthy Lunch!)

Ingredients
  

  • 1 large (10-inch) flour or whole wheat tortilla
  • 3 tablespoons hummus any flavor
  • 1/2 cup fresh spinach or romaine lettuce
  • 4 ounces sliced deli turkey low-sodium
  • 1/4 cup sliced bell pepper any color
  • 1/4 cup sliced cucumber
  • 2 tablespoons shredded carrots
  • 1 tablespoon thinly sliced red onion
  • 1 tablespoon crumbled feta cheese optional

Method
 

  1. Lay the tortilla on a flat work surface. Spread the hummus evenly over the surface, leaving a small 1/2-inch border around the edge.
  2. In a line down the center of the tortilla, layer the spinach, followed by the sliced turkey, bell pepper, cucumber, shredded carrots, and red onion.
  3. Sprinkle the crumbled feta cheese (if using) over the vegetables.
  4. Fold the bottom third of the tortilla up over the fillings. Fold the left side tightly over the center, then continue to roll firmly until the wrap is sealed. Slice in half diagonally and serve.
