- Lay a tortilla on a clean, flat surface. Spread about 3-4 tablespoons of hummus evenly over the tortilla, leaving a small half-inch border.
- Place 2 slices of provolone cheese in the center, overlapping slightly. This creates a barrier to prevent sogginess.
- Top the cheese with a generous handful of spinach.
- Arrange about 3-4 slices of turkey over the spinach.
- Place a small handful of the cucumber matchsticks and sliced red onion in a line down the middle of the turkey.
- Fold the left and right sides of the tortilla in towards the center. Starting from the edge closest to you, roll the wrap up tightly.
- To store, wrap each finished wrap tightly in parchment paper, then in aluminum foil, and refrigerate for up to 4 days.
