- Preheat oven to 400°F (200°C). Heat oil in skillet and char corn kernels until golden-brown with black spots.
- Spread half the chips on the silver baking sheet. Layer with half the cheese, chicken, beans, and corn. Repeat with second layer.
- Bake for 8-10 minutes until the cheddar is bubbly and Monterey Jack is completely melted.
- Top with diced tomatoes, sliced jalapeños, small dollops of sour cream, and a scatter of fresh cilantro.
