  • 2 cups (225g) Sharp Orange Cheddar Cheese Freshly shredded
  • 2 cups (225g) Monterey Jack Cheese Freshly shredded
  • 2 cups (300g) Shredded Seasoned Chicken Cooked and seasoned with cumin/salt
  • 1 can (425g) Black Beans Rinsed and drained
  • 1 cup (150g) Charred Corn Kernels Blistered in skillet
  • 2 medium Jalapeños Freshly sliced
  • 3 medium (250g) Roma Tomatoes Finely diced
  • 1/2 cup (120ml) Sour Cream Full fat, for dolloping
  • 1/4 cup (10g) Fresh Cilantro Chopped flakes

Equipment

  • 1 Rectangular Silver Baking Sheet Standard 13x18 inch
  • 1 Cast Iron Skillet For charring the corn

Method
 

Preparation
  1. Preheat oven to 400°F (200°C). Heat oil in skillet and char corn kernels until golden-brown with black spots.
  2. Spread half the chips on the silver baking sheet. Layer with half the cheese, chicken, beans, and corn. Repeat with second layer.
  3. Bake for 8-10 minutes until the cheddar is bubbly and Monterey Jack is completely melted.
  4. Top with diced tomatoes, sliced jalapeños, small dollops of sour cream, and a scatter of fresh cilantro.
