Valentine's Skillet Cookie: The Ultimate Gooey Dessert for Two

Ingredients
  

  • 1/2 cup unsalted butter melted
  • 1/2 cup light brown sugar packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup chocolate chips a mix of semi-sweet and milk chocolate is great
  • 2 tablespoons Valentine's sprinkles divided

  • 1 8 or 10-inch Cast-Iron Skillet
  • 2 Mixing Bowls

Method
 

  1. Preheat your oven to 350°F (175°C). Generously grease an 8 or 10-inch cast-iron skillet.
  2. In a large bowl, whisk together the melted butter, brown sugar, and granulated sugar until combined. Add the egg and vanilla, and whisk until smooth.
  3. In a separate bowl, stir together the flour, baking soda, and salt.
  4. Gently fold the dry ingredients into the wet ingredients until just combined. Do not overmix. Fold in the chocolate chips and half of the Valentine's sprinkles.
  5. Press the cookie dough evenly into the prepared skillet. Top with the remaining chocolate chips and sprinkles.
  6. Bake for 20-25 minutes, until the edges are golden brown and the center is just set. Let it cool for 5-10 minutes before serving warm, preferably with a scoop of vanilla ice cream.

Notes

Do Not Overbake: The cookie will continue to cook in the hot skillet after you remove it from the oven. For a gooey center, it should look slightly underdone when you take it out.
