  • 1 cup plain Greek yogurt Full-fat or 2% recommended for creaminess
  • 1 cup milk Unsweetened almond milk or any milk of choice
  • 1-2 tbsp pure maple syrup Or honey, to taste
  • 1 tsp vanilla extract
  • 1 pinch sea salt Optional, but recommended
  • Fresh berries, granola, nuts, or seeds For serving

Method
 

  1. In a medium-sized mixing bowl or a large mason jar, add the Greek yogurt, milk, maple syrup, and vanilla extract. Whisk together until the mixture is completely smooth.
  2. Stir in the chia seeds and the pinch of salt until well combined.
  3. Let the mixture sit for 5-10 minutes on the counter, then stir it vigorously one more time to break up any potential clumps. This is the secret to a smooth pudding!
  4. Cover the bowl or seal the jar and place it in the refrigerator to chill for at least 4 hours, or preferably overnight, until thick and creamy.
  5. Give the pudding a final stir. If needed, thin with a splash of milk. Serve chilled, topped with your favorite fresh fruit, granola, or nuts.

Notes

For a vegan version, use plant-based yogurt (like coconut or almond) and non-dairy milk. For a higher protein version, whisk in a scoop of your favorite protein powder along with the wet ingredients. The pudding will keep in an airtight container in the refrigerator for up to 5 days.
