Method
- In a medium-sized mixing bowl or a large mason jar, add the Greek yogurt, milk, maple syrup, and vanilla extract. Whisk together until the mixture is completely smooth.
- Stir in the chia seeds and the pinch of salt until well combined.
- Let the mixture sit for 5-10 minutes on the counter, then stir it vigorously one more time to break up any potential clumps. This is the secret to a smooth pudding!
- Cover the bowl or seal the jar and place it in the refrigerator to chill for at least 4 hours, or preferably overnight, until thick and creamy.
- Give the pudding a final stir. If needed, thin with a splash of milk. Serve chilled, topped with your favorite fresh fruit, granola, or nuts.
Notes
For a vegan version, use plant-based yogurt (like coconut or almond) and non-dairy milk. For a higher protein version, whisk in a scoop of your favorite protein powder along with the wet ingredients. The pudding will keep in an airtight container in the refrigerator for up to 5 days.
