  • 2 cups Short-grain white rice 400g dry
  • 1 lb Beef ribeye or sirloin 450g, thinly sliced
  • 2 tbsp Soy sauce For beef marinade
  • 1 tbsp Brown sugar For beef marinade
  • 2 medium Carrots 150g, julienned
  • 1 medium Zucchini 200g, sliced into rounds
  • 8 oz Soybean sprouts 225g, blanched
  • 1 large bunch Spinach 300g, wilted
  • 8 large Shiitake mushrooms 150g, sliced
  • 4 large Eggs Fried with runny yolk
  • 3 tbsp Gochujang paste 45g
  • 1 tbsp Toasted white sesame seeds For garnish
  • 2 stalks Green onions Finely sliced

Equipment

  • 1 Cast Iron Skillet For searing beef and vegetables.
  • 1 Rice Cooker For perfect steamed white rice.
  • 1 Chef's Knife For precise julienne cuts.

Method
 

Preparation
  1. Cook 2 cups (400g) of white rice with 2 cups (480ml) water until fluffy.
  2. Mix sliced beef with soy sauce, brown sugar, and sesame oil. Let sit for 20 minutes.
Vegetable Components
  1. Blanch bean sprouts in boiling salted water for 2 minutes, then ice bath and season with sesame oil.
  2. Blanch spinach for 30 seconds, squeeze dry, and season with garlic and salt.
  3. In a hot skillet, sear zucchini rounds until golden. Sauté julienned carrots until tender-crisp.
  4. Sauté sliced shiitake mushrooms with a pinch of salt until browned and earthy.
Final Steps
  1. Sear marinated beef over high heat until charred and caramelized.
  2. Fry eggs in a non-stick pan until whites are set but yolks are still runny.
  3. Divide rice into bowls. Arrange beef and vegetables in sections on top. Place the egg in the center. Drizzle with gochujang sauce and garnish with sesame seeds and green onions.
