  • 1 1/4 cups light brown sugar 250g, packed
  • 1/2 cup granulated sugar 100g
  • 2 large eggs room temperature
  • 1 large egg yolk for extra richness
  • 1 tbsp vanilla extract 15ml
  • 3 cups all-purpose flour 375g
  • 1 1/2 tsp cornstarch 4g
  • 1 tsp baking soda 6g
  • 1 tsp sea salt 6g
  • 2 cups dark chocolate chunks 340g, hand-chopped

Equipment

  • 1 Large Baking Sheet Heavy-duty for even heating
  • 1 White Parchment Paper For non-stick and visual contrast
  • 1 3-ounce Cookie Scoop For oversized cookies

Method

Preparation
  1. Cream softened butter and both sugars in a stand mixer for 3-5 minutes until pale and fluffy. Add eggs, yolk, and vanilla; mix until just combined.
  2. Whisk flour, cornstarch, baking soda, and salt. Slowly incorporate into wet ingredients. Fold in chocolate chunks by hand.
  3. Chill dough for 30 minutes. Use a large scoop to form oversized balls and place on a parchment-lined tray.
  4. Bake at 350°F (175°C) for 10-12 minutes until edges are golden and surface is crinkled but center remains soft. Let cool on the pan.
