  • 1.5 lbs Large Shrimp Tail-on, peeled and deveined (680g)
  • 1/4 cup Extra Virgin Olive Oil (60ml)
  • 4 cloves Garlic Minced (20g)
  • 2 tbsp Lemon Juice Freshly squeezed (30ml)
  • 1 tsp Lemon Zest
  • 1 tsp Red Pepper Flakes (2g)
  • 1 tsp Cracked Black Pepper (2g)
  • 1 tsp Kosher Salt (6g)
  • 1/4 cup Fresh Parsley Finely chopped (15g)
  • 1 wedge Lemon For serving

Equipment

  • 1 Outdoor Grill or Grill Pan
  • 8 Metal Skewers Prevents shrimp from falling through grates.
  • 1 Small Saucepan For the lemon-garlic oil.

Method
 

Preparation
  1. Pat the shrimp thoroughly dry with paper towels. Thread the shrimp onto skewers, piercing through the body and tail.
  2. In a small saucepan, combine olive oil and minced garlic over low heat for 3-4 minutes until fragrant. Stir in lemon juice, zest, and half the red pepper flakes. Set aside.
Grilling
  1. Season shrimp with salt and cracked black pepper. Place skewers on a preheated 400°F (200°C) grill. Grill for 2-3 minutes per side until charred and opaque.
  2. Remove shrimp from skewers into a white ceramic bowl. Pour the lemon-garlic oil over the heap. Toss with fresh parsley and remaining red pepper flakes.

Notes
