  • 2 6 oz Salmon Fillets Center-cut, 1.5 inches thick
  • 1/2 cup (60g) Panko Breadcrumbs Japanese style
  • 1/3 cup (35g) Parmesan Cheese Finely grated
  • 1 tsp (1g) Dried Parsley
  • 1/2 tsp (1g) Cracked Black Pepper
  • 4 tbsp (56g) Unsalted Butter Divided
  • 2 tbsp (30ml) Lemon Juice Freshly squeezed

Equipment

  • 1 Baking Sheet Lined with parchment paper
  • 1 Small Saucepan For the lemon butter sauce
  • 1 Meat Thermometer To check for 145°F internal temp

Method
 

Prepare the Salmon
  1. Preheat oven to 400°F (200°C). Pat the salmon fillets completely dry with paper towels and season lightly with salt.
  2. In a small bowl, combine 1 tbsp (14g) of melted butter, Panko, Parmesan, parsley, and black pepper until well mixed.
Baking
  1. Pile the Panko mixture onto the salmon fillets in a thick, uneven layer. Place on a parchment-lined baking sheet.
  2. Bake for 12-15 minutes until the crust is golden-brown and the salmon reaches an internal temperature of 145°F (63°C).
Finishing
  1. In a saucepan, melt remaining butter and whisk in lemon juice and a pinch of parsley until glossy.
  2. Place salmon on a white ceramic plate and drizzle the lemon butter sauce around the base.
