  • 16 oz Full-fat brick cream cheese Softened to room temperature
  • 4 tbsp Unsalted butter Softened
  • 1 cup Powdered sugar Sifted
  • 1 tsp Vanilla bean paste Or pure vanilla extract
  • 1/2 cup Salted caramel sauce Thick consistency for the core
  • 2 cups Salted pretzels Mini or sticks, crushed

  • 1 Small Cookie Scoop 1 tablespoon capacity for even portions.
  • 1 Food processor To crush pretzels into a textured crumb.
  • 1 Electric hand mixer To whip the cream cheese filling until smooth.

Method
 

Preparation and Assembly
  1. Drop 1/2 teaspoon mounds of caramel onto a parchment-lined plate and freeze for 30 minutes until solid.
  2. Beat cream cheese and butter until smooth. Add powdered sugar and vanilla; beat until dense and creamy.
  3. Flatten 1 tbsp of filling, place a frozen caramel mound in the center, and roll into a sphere. Chill for 1 hour.
  4. Roll chilled balls in crushed pretzels. Drizzle with warmed caramel sauce before serving.
